Today I bring you a vegan recipe that I tried yesterday for the first time, and I loved it! I love pancakes. They are good for breakfast, for a snack during the day, for dessert. I love to eat pancakes with some tea, and I think it's perfect for those colder days.

Pumpkin Pancakes with Apple Sauce
Ingredients
For the pancakes
150 g pumpkin puree
150 ml oat milk
75 ml mineral water
1 teaspoon vanilla extract
200 g spelt flour
1 teaspoon yeast
1 teaspoon cinnamon
2 tablespoons of coconut sugar
For the apple sauce
100 ml soy cream
100 ml mineral water
1 apple
1 tablespoon coconut sugar
1 teaspoon cinnamon
Coconut oil to fry
Pancakes:
1. Mix the pumpkin puree, the milk, the water and the sugar in a bowl.
2. Add all the other ingredientes one by one, while you keep stirring until well blended.
3. Heat a tiny bit of coconut oil in a frying pan, and when it's hot enough pour around 1/4 of a cup of batter. Wait until batter is cooked to flip it (you will notice bubbles appearing on the surface) and both sides are golden. For me, it was around 3 to 4 minutes to cook each side of the pancakes, over a low flame. Repeat this step until the batter is over.

Apple Sauce:
1. Peel the apple and cut into small pieces.
2. Heat up a pan with 100 ml of water, and when it boils add the cinnamon, the sugar and the cream. 3. Leave it to simmer for about 10 minutes, but keep stirring until thick and creamy.
4. You can add another pinch of cinnamon after turning off the heat, and stir again.
