Couscous with Beans and Courgette

Today I'm bringing a very easy recipe. Sometimes I don't want to spend a lot of time in the kitchen or I don't have many ingredients, and that's when I come up with things like this one.

I love couscous. They are easy to prepare and you can combine them with so many other ingredients.

Couscous with Beans and Courgette



Ingredients
2 cups of couscous
2 cups of boiling water
Half an onion
1 can of white beans
1 courgette
Pintch of salt
1/2 teaspoon cayenne pepper
1 tablespoon olive oil

Instructions
1. In a bowl, cover the couscous with boiling water. If you never cooked couscous it may seem this quantity isn't enough, but they will grow with the water (sometimes I use only a cup). 
2. Leave for 10 minutes, and then fluff up the grains with a fork.
3. Chop the onion and slice the cougette. Heat up the olive oil in a frying pan on medium heat, and when it's hot add the onion. When the onion turns golden, mix the courgette.
4. If you want, you can add spices to your couscous now. I only added a little bit of salt (some people add the spices at the same time they add the water, in the beginning).
5. After around 10 minutes, add the beans, the pepper and a pintch of salt to the content in the frying pan. Mix all the ingredients really well and let it cook for 5 minutes.
6. When the content of the frying pan is ready, mix it with the couscous in the bowl. Ready to serve.

It seems like a pretty basic dish, and it's really easy to make, but it's delicious!
